The Best Vegetarian Tapas Recipes

I thought that making Spanish tapas would be difficult. The best part about this recipe is that it couldn’t be easier to make, and yet it looks super fancy when you serve it to others. I haven’t cooked with eggplant since last summer, and I had almost forgotten delicious it is. Last weekend, I was invited to a potluck and was told that I had to bring Spanish tapas. Not just any tapas too, but specifically tapas for vegetarians. I’m never one to shy away from new food-related challenges, but for this, I didn’t even know where to begin. Even after my experiences at Spanish tapas restaurants, the only dishes I could think of were paella and gazpacho. Lucky for me, a good friend had just returned for a month in Spain. According to her expert opinion, I needed to make this recipe as it was one of her favorite Spanish Vegetarian Tapas Recipes. If it was summer, I might have grilled the eggplant slices. However, it’s still a bit too cold outside for me.
On a side note, I’ve also seen this recipe served with an herb-tomato sauce on the side. I elected not to as I thought this dish was great as is. I used to cook for elderlies in their homes and I cooked mostly Mediterranean-centred diets (e.g. baked fish, olive oil+vinegar, boiled veggies, pimenta for the odd stir fry, etc.) But this woman is Korean, likes her kimchi and her seaweed soup (which I can prepare) though she likes some western dishes.
